Roll with it! Lilly requested healthy rice paper rolls in her lunchbox this morning, so I thought we share the recipe for anyone looking for lunchbox inspiration.
These easy DIY rice paper rolls are perfect for school lunches and so versatile! We used chicken, avocado, lettuce, carrot, and cucumber, but you can fill them with anything you have at home—think red onion, tuna, corn, tomatoes or even rice noodles—the possibilities are endless.
INGREDIENTS
Rice paper sheets
Cooked chicken, shredded or sliced
Avocado, sliced
Lettuce leaves, chopped
Carrot, grated
Cucumber, sliced
Sweet chili sauce (for dipping)
METHOD
Prepare your ingredients - wash & cut
Prepare the rice paper following packet instructions
Assemble the rolls - place the ingredients in the centre of the rice paper
Roll it up - fold the sides of the rice paper in, then roll from the bottom, tucking in the filling as you go to form a tight roll.
Place in lunchbox with a side of sweet chili sauce for dipping
Tips: I wrapped these rolls in baking paper to stop them from sticking to each other in the lunchbox. Use whatever fresh ingredients you have in your fridge & pantry. To save time in the morning making these, prepare ingredients the night before so all you need to do is roll them in the morning.
